Roasted Red Pepper Chipotle Hummus Dip
Makes 2 Cups (16 servings)
Serving size: 2 tbsp
Ingredients
1-15oz can garbanzo beans (chickpeas), drained
½ c. bottled roasted red sweet peppers
¼ c. creamy peanut butter
3 tbsp lemon juice
4 cloves garlic
½ -1 chipotle pepper in adobe sauce
1 tsp ground cumin
¼ tsp salt
1/8 tsp black pepper
1/8 tsp paprika
Directions
1. Place all ingredients in blend and process until smooth.
2. Serve with fresh veggies, whole grain crackers or toasted pita bread triangles.
